Happy Valentine's Day


Universal energy today is one of Love … as we send forth happy thoughts and positive waves of energy … and as we smile and hug and spend cherished time with those we love. May you have the best Valentine’s Day ever !

It just wouldn’t be Valentine’s Day without chocolate ! I found an easy recipe for Almond Chocolate Truffles … thanks to Kimberley Synder. These are easy to make and a treat for the taste buds. I used organic raw cacao powder … a gift from my daughter, Robin, and lots of love. Here is the recipe:

Raw Almond-Cacao Truffles

3/4 cup raw cacao powder

2 cups ground raw almonds

2/3 cup agave (I used raw honey)

1 T coconut butter or oil

pinch of Celtic or Himalayan salt

1 cup shredded dried coconut flakes

Combine all the ingredients except coconut flakes in a food processor and process just until everything is mixed and holds together. Take a small amount into your palms and roll into a ball. Add your Love. Dip into the coconut flakes. Roll a bit to give a nice coating of the flakes. When finished … put in freezer to firm and harden. These are best stored in the freezer … but they won’t last long !
